A few easy ones I've taken: ANTH 195: Cultural Anthropology (also counts as a gen ed) ANTH 196: Biological Anthropology. KIN 156: Scuba diving is easy, credit/no credit, and super awesome. I'd also be interested to hear of any classes that aren't necessarily easy, but are otherwise really interesting, teach you useful skills, etc..
